Guacamole can be as simple as avocado, lime and salt, but a tiny bit of effort can deliver something rather more exciting.
2 avocados
2 tbsp lime juice
2 tbsp finely shredded coriander
1 tbsp finely chopped red onion
¼ cup pickled jalapenos, roughly chopped
1 roma tomato, seeds and pulp removed and flesh finely chopped
freshly ground black pepper, to serve
Halve the avocados, remove the seed and scoop the flesh into a bowl. Add the lime juice and ¼ teaspoon of salt and mash together with a fork to form a chunky salsa. Stir through the coriander, red onion, jalapenos and tomato and finish with a little
freshly ground black pepper.
